Description
These Cherry Cranberry Energy Bites are a quick, no-bake snack that’s sweet, tart, and lightly chewy, perfect for on-the-go energy.
Ingredients
Scale
- 1 cup rolled oats
- 1/2 cup dried cherries
- 1/2 cup dried cranberries
- 1/2 cup nut butter (e.g., almond or peanut butter)
- 1/3 cup honey or maple syrup
- 1/4 cup flax seeds
- 1/4 cup chocolate chips (optional)
- 1 tsp vanilla extract
- a pinch of salt
Instructions
- Measure all ingredients and line a baking sheet with parchment paper. If your dried cherries are large, chop them into smaller pieces.
- In a large mixing bowl, combine all the ingredients. Stir until evenly coated.
- If the mixture feels too sticky, refrigerate for about 20 minutes to firm it up.
- Once manageable, roll small balls about 1 inch in diameter and place on the prepared baking sheet. Refrigerate for at least 30 minutes to set.
Notes
Store in an airtight container in the fridge for up to a week or freeze for longer storage.
