- 2 cups fresh or frozen cherries, pitted
- 1 cup sour cream
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 tablespoons cornstarch
- 1 pre-made pie crust or slab pie crust
- 1/4 teaspoon salt
- 1 tablespoon lemon juice
- 1 egg (for egg wash)
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the pitted cherries, sour cream, sugar, vanilla extract, cornstarch, salt, and lemon juice. Stir thoroughly until well incorporated.
- Roll out the pre-made pie crust on a floured surface and transfer it to a baking dish. Pour the cherry mixture into the crust and spread evenly.
- Brush the top crust with an egg wash, then bake for 45-50 minutes until bubbly and golden brown. Allow to cool before slicing.
Notes
For extra flavor, add a teaspoon of almond extract. If using frozen cherries, thaw and drain to prevent a soggy crust.
