Description

A delightful dish combining tender chicken, vibrant basil pesto, and al dente pasta for a satisfying meal.


Ingredients

  • 2 chicken breasts
  • 8 oz pasta (penne or fettuccine)
  • 1 cup basil pesto
  • 1 cup cherry tomatoes, halved
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper. Cook the chicken for 6-7 minutes on each side until golden brown and fully cooked.
  3. Remove chicken from skillet, let rest, and then slice.
  4. In the same skillet, add drained pasta, basil pesto, and cherry tomatoes. Toss gently until well combined.
  5. Top the pasta with sliced chicken and sprinkle with Parmesan cheese before serving.

Notes

For added flavor, consider marinating the chicken in pesto before cooking. You can also add vegetables like spinach or zucchini.
