Description

A delightful fusion of flavors and textures, these cheesy, crispy tortillas filled with succulent chicken and colorful veggies make for an easy, satisfying meal.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 flour tortillas
  • 1/2 cup bell peppers, sliced
  • 1/2 cup onion, sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Sour cream and salsa for serving

Instructions

  1. Heat olive oil in a skillet over medium heat. Add bell peppers and onions, and sauté until softened, about 5 minutes.
  2. In a bowl, combine the shredded chicken with salt and pepper.
  3. Place one tortilla in the skillet over medium heat. Sprinkle half of the chicken mixture and half of the cheese on one half of the tortilla. Fold and cook until golden brown, about 3-4 minutes per side. Repeat with the remaining tortillas.
  4. Once cooked, remove from skillet and cut into wedges. Serve warm with sour cream and salsa.

Notes

Use fresh ingredients for better taste. Don’t overstuff the tortillas to prevent bursting. Brushing tortillas with olive oil can add extra crispiness.
