- 9 lasagna noodles
- 1 tablespoon olive oil
- 1 pound chicken sausage, removed from casings
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 2 cups spinach
- 24 ounces marinara sauce
- 15 ounces ricotta cheese
- 1 egg
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Bring a large pot of salted water to a boil and cook the lasagna noodles until al dente. Drain and lay flat to prevent sticking.
- In a medium bowl, mix ricotta cheese, egg, and a pinch of salt and pepper until smooth; set aside.
- Heat olive oil in a large skillet over medium heat. Brown the chicken sausage, then add onion, garlic, and red bell pepper; cook until tender. Add spinach and stir until wilted. Season with salt and pepper.
- Spread marinara sauce in a 9×13-inch baking dish and layer with noodles, ricotta mixture, sausage mixture, and mozzarella. Repeat layers and top with sauce, mozzarella, and Parmesan. Cover and bake for 25 minutes, then uncover and bake for an additional 15 minutes until the cheese is bubbly and golden. Let cool for 10 minutes before slicing.

Let the lasagna rest for 10 minutes before slicing to ensure clean servings. Can be made ahead and stored in the fridge or freezer.
