- 1 lb chicken thighs
- 3 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1 tsp turmeric
- 1/2 tsp ground cinnamon
- 1 tsp salt
- 1/2 tsp black pepper
- 1 onion, sliced
- 1 bell pepper, sliced
- 1 cup cherry tomatoes
- Pita bread or rice, for serving
- Tzatziki sauce, for drizzling
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix olive oil, cumin, coriander, paprika, turmeric, cinnamon, salt, and pepper.
- Add the chicken thighs to the bowl and coat them with the spice mixture.
- Arrange the chicken on a large sheet pan, surrounded by the sliced onion, bell peppers, and cherry tomatoes.
- Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
- Serve hot with pita bread or over rice, drizzled with tzatziki sauce.
Notes
Feel free to adjust spices or use different vegetables based on preference. For more flavor, marinate the chicken ahead of time.
