Description
A delightful twist on traditional dishes, packed with juicy chicken, black beans, and melted cheese between soft tortillas.
Ingredients
Scale
- 2 cups shredded cooked chicken
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 cup salsa
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 large tortillas
- 1 avocado, sliced
- 1 cup lettuce, shredded
- 1/4 cup sour cream
- 1/4 cup fresh cilantro, chopped
Instructions
- Preheat your oven to 375°F (190°C). Gather all your ingredients to make the rest of the process smooth and efficient.
- In a large bowl, combine the shredded chicken, black beans, corn, and salsa. Stir well to ensure all the ingredients are mixed thoroughly, creating a flavorful filling for your torta.
- On a baking sheet, lay down one tortilla. Top it with a generous portion of the chicken mixture, followed by a sprinkle of cheese.
- Repeat the layering process with the remaining tortillas, filling, and cheese. Once you’ve added the last layer of filling, place another tortilla on top and sprinkle with more cheese, if desired. Bake in the preheated oven for about 15-20 minutes or until the cheese is melted and bubbly.
- After baking, remove the torta from the oven and let it cool for a few minutes. This helps the layers set, making it easier to cut.
- Cut the torta into wedges and serve topped with sliced avocado, shredded lettuce, a dollop of sour cream, and freshly chopped cilantro.
