Description

Quick and delicious tacos filled with seasoned shrimp and a tangy slaw, perfect for any weeknight dinner.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 cup cabbage, shredded
  • 1/2 cup carrots, shredded
  • 1/4 cup cilantro, chopped
  • 2 tbsp lime juice
  • Sour cream or avocado for topping (optional)

Instructions

  1. In a bowl, toss the shrimp with olive oil, chili powder, cumin, salt, and pepper to coat evenly.
  2. Heat a skillet over medium-high heat and cook the shrimp for 2-3 minutes on each side until pink and cooked through.
  3. In another bowl, combine cabbage, carrots, cilantro, and lime juice for the slaw and toss to coat.
  4. Warm the tortillas until pliable, then assemble tacos with shrimp and slaw. Add sour cream or avocado if desired and serve immediately.

Notes

For extra flavor, lightly toast the tortillas before assembly. You can customize the slaw by adding radishes or using parsley instead of cilantro.
