Description

Delightful scones that combine the rich flavors of coffee and the sweetness of chocolate in a fluffy, buttery treat.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold, cubed unsalted butter
  • 1/2 cup chocolate chips
  • 1/2 cup brewed coffee, cooled
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the flour, sugar, baking powder, and salt. Whisk together thoroughly.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the chocolate chips.
  5. In another bowl, whisk together the brewed coffee, egg, and vanilla extract. Pour into the dry mixture and combine gently until just blended.
  6. Turn the dough onto a floured surface and knead gently a few times. Shape into a circle about 1 inch thick and slice into wedges.
  7. Place wedges on a baking sheet lined with parchment paper and bake for 15-20 minutes until golden brown.
  8. Allow to cool slightly before serving.

Notes

Serve warm with butter or jam. Store leftovers in an airtight container for up to 2 days or freeze for up to 3 months.
