Ingredients

- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold, cubed unsalted butter
- 1/2 cup chocolate chips
- 1/2 cup brewed coffee, cooled
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the flour, sugar, baking powder, and salt. Whisk together thoroughly.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the chocolate chips.
- In another bowl, whisk together the brewed coffee, egg, and vanilla extract. Pour into the dry mixture and combine gently until just blended.
- Turn the dough onto a floured surface and knead gently a few times. Shape into a circle about 1 inch thick and slice into wedges.
- Place wedges on a baking sheet lined with parchment paper and bake for 15-20 minutes until golden brown.
- Allow to cool slightly before serving.
Notes
Serve warm with butter or jam. Store leftovers in an airtight container for up to 2 days or freeze for up to 3 months.
