Delicious bars that combine zucchini and chocolate for a nutritious treat perfect for any time of the day.


Ingredients

  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. In a bowl, mix grated zucchini, sugars, vegetable oil, egg, and vanilla extract until combined.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  4. Combine wet and dry ingredients until just mixed, being careful not to overmix.
  5. Fold in chocolate chips gently.
  6. Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. Let cool in the pan before removing and cooling completely before cutting.

Notes

Make sure to drain excess moisture from the grated zucchini. You can freeze for up to 3 months if wrapped properly.
