- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups fresh cranberries, chopped
- 1/2 cup sugar (for cranberries)
- 2 cups whipped cream
- 1 package of ladyfinger cookies or sponge cake, crumbled
- Mint leaves for garnish (optional)
Instructions
- In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Mix the chopped cranberries with sugar and let them sit for about 30 minutes until the juice forms.
- Layer the bottom of your serving cups with a layer of ladyfinger cookies or crumbled sponge cake.
- Add a layer of the cream cheese mixture followed by a layer of the cranberry mixture.
- Repeat the layers until the cups are filled, finishing with a layer of whipped cream on top.
- Garnish with mint leaves if desired.
- Chill in the refrigerator for at least an hour before serving.
