Description

These easy, no-bake Christmas Energy Bites are chewy, slightly sweet, and infused with holiday flavors, making them a perfect snack for any occasion.

Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup nut butter (such as almond or peanut butter)
  • 1/3 cup honey or maple syrup
  • 1/2 cup chocolate chips
  • 1/2 cup chopped nuts or seeds
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Measure all ingredients and line a small tray with parchment paper. Stir thick nut butter to make it smooth.
  2. In a large bowl, combine oats, nut butter, honey or maple syrup, chocolate chips, nuts/seeds, vanilla extract, cinnamon, and salt. Mix until sticky.
  3. Refrigerate the mixture for about 30 minutes to firm up.
  4. Use a tablespoon or scoop to portion and roll into 1-inch balls. Place them on the parchment and store in an airtight container in the fridge.

Notes

For a less sweet option, reduce honey/maple syrup. These bites can be customized with various mix-ins to suit flavor preferences.
