- 1 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup brown sugar
- 1/4 cup chopped nuts or oats for topping
- 1/2 teaspoon cinnamon for topping
Instructions
- Preheat the oven to 375°F (190°C) and grease a muffin tin or line with paper cups.
- In a large bowl, whisk together the flour, sugar, baking powder, ground cinnamon, and salt.
- In another bowl, beat the melted butter, milk, eggs, and vanilla until smooth, then combine with the dry ingredients and stir gently until just mixed.
- In a small bowl, mix the brown sugar, chopped nuts or oats, and cinnamon for the topping.
- Divide the muffin batter into the prepared muffin tin, filling each cup about 2/3 full, and sprinkle the topping over each muffin.
- Bake for 18-20 minutes, or until a toothpick comes out clean and the tops are golden.
- Let cool in the tin for 5 minutes, then transfer to a wire rack to cool slightly before serving.
Notes
For best results, do not overmix the batter and fill cups evenly to ensure even baking.
