Ingredients

- 1 ½ cups warm water
- 1 packet active dry yeast
- 4 cups all-purpose flour
- ¼ cup granulated sugar (plus for topping)
- 1 teaspoon salt
- ¼ cup baking soda
- 1 beaten egg
- 1 tablespoon water
- 1 tablespoon ground cinnamon
- melted butter (for brushing)
Instructions
- Combine warm water and yeast in a bowl and let sit for 5 minutes.
- Add flour, sugar, and salt into the yeast mixture and mix until smooth.
- Transfer dough to a floured surface and knead for 5-7 minutes until elastic.
- Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour.
- Preheat oven to 450°F (230°C) and line a baking sheet with parchment paper.
- Boil water and baking soda in a large saucepan.
- Punch down the risen dough, divide into 12 pieces, and shape into pretzels.
- Dip each pretzel into boiling water for 30 seconds, then return to the baking sheet.
- Brush pretzels with egg wash and sprinkle with cinnamon sugar mixture.
- Bake for 12-15 minutes until golden brown.
- Remove from oven and brush with melted butter. Enjoy warm!
