  • 1 lb beef stew meat, cut into cubes
  • 1 cup carrots, diced
  • 1 cup potatoes, diced
  • 1/2 cup peas
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup frozen mixed vegetables
  • 1/4 cup flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp thyme
  • 1 tsp Worcestershire sauce
  • 2 pie crusts (store-bought or homemade)
  • 1 egg (for egg wash)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large pot, brown the beef over medium heat.
  3. Add the chopped onions and minced garlic; cook until softened.
  4. Stir in the flour, salt, black pepper, and thyme.
  5. Gradually add the beef broth and Worcestershire sauce; bring to a boil then reduce heat and simmer for 30 minutes.
  6. Add the diced carrots, potatoes, and peas; simmer for an additional 15 minutes.
  7. Roll out one pie crust and place it in a pie dish; pour in the beef mixture.
  8. Cover with the second crust and seal the edges; cut slits in the top.
  9. Brush the top crust with beaten egg.
  10. Bake for 30-35 minutes until golden brown.
  11. Let cool for a few minutes before serving.

Notes
