- 1 lb beef stew meat, cut into cubes
- 1 cup carrots, diced
- 1 cup potatoes, diced
- 1/2 cup peas
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 cup frozen mixed vegetables
- 1/4 cup flour
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp thyme
- 1 tsp Worcestershire sauce
- 2 pie crusts (store-bought or homemade)
- 1 egg (for egg wash)
Instructions
- Preheat the oven to 425°F (220°C).
- In a large pot, brown the beef over medium heat.
- Add the chopped onions and minced garlic; cook until softened.
- Stir in the flour, salt, black pepper, and thyme.
- Gradually add the beef broth and Worcestershire sauce; bring to a boil then reduce heat and simmer for 30 minutes.
- Add the diced carrots, potatoes, and peas; simmer for an additional 15 minutes.
- Roll out one pie crust and place it in a pie dish; pour in the beef mixture.
- Cover with the second crust and seal the edges; cut slits in the top.
- Brush the top crust with beaten egg.
- Bake for 30-35 minutes until golden brown.
- Let cool for a few minutes before serving.
Notes
For extra flavor, consider marinating the beef in Worcestershire sauce beforehand. Feel free to customize your vegetables based on preference.
