Description

Fudgy, chocolatey brownies dotted with chewy shredded coconut, the perfect treat for any occasion.


Ingredients

  • 1 cup unsweetened cocoa powder
  • 1 cup sugar
  • 1/2 cup butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 cup shredded coconut

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a large bowl, combine cocoa powder, sugar, and melted butter. Mix until smooth. Beat in eggs one at a time, then stir in vanilla.
  3. In a separate bowl, combine flour and baking powder. Fold the dry mix into the cocoa mixture just until combined. Stir in shredded coconut.
  4. Pour the batter into the prepared baking pan and spread it evenly. Bake for 20–25 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs.
  5. Allow the brownies to cool in the pan on a wire rack. Once cool, lift them out and cut into 9 squares. Serve at room temperature or slightly warm.

Notes

For extra fudginess, reduce bake time by 2 minutes and allow longer cooling. Serve warm with ice cream or dust with powdered sugar.
