Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together melted coconut oil (or butter), sugar, eggs, and vanilla extract until smooth.
- In another bowl, combine coconut flour, baking soda, and salt.
- Gradually add the dry mixture to the wet mixture, stirring until well combined.
- Allow the dough to rest for 10 minutes.
- Scoop tablespoon-sized portions of dough onto a parchment-lined baking sheet, leaving space between each.
- Bake for 10-12 minutes or until the edges are golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
