Ingredients

  • 1 cup coconut flour
  • 1/2 cup coconut oil or butter, melted
  • 1/2 cup sugar or sweetener of choice
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together melted coconut oil (or butter), sugar, eggs, and vanilla extract until smooth.
  3. In another bowl, combine coconut flour, baking soda, and salt.
  4. Gradually add the dry mixture to the wet mixture, stirring until well combined.
  5. Allow the dough to rest for 10 minutes.
  6. Scoop tablespoon-sized portions of dough onto a parchment-lined baking sheet, leaving space between each.
  7. Bake for 10-12 minutes or until the edges are golden.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
