- 2 lbs chicken wings
- 1 cup coconut milk
- 2 tablespoons lime juice
- 1 tablespoon lime zest
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon chili powder
- Fresh cilantro for garnish
Instructions
- In a large bowl, combine coconut milk, lime juice, lime zest, garlic, ginger, salt, pepper, and chili powder. Stir until well mixed.
- Add chicken wings to the marinade and toss to coat well. Cover and refrigerate for at least 1 hour, or overnight for more flavor.
- Preheat the oven to 400°F (200°C). Arrange the marinated wings on a baking sheet lined with foil or parchment paper.
- Bake for 35-40 minutes, turning halfway through, until wings are crispy and cooked through. Garnish with fresh cilantro before serving. Enjoy!
Notes
For an extra kick, add sriracha to the marinade. Fresh lime juice and zest yield the best flavor. These wings can also be grilled.
