- 2 cups all-purpose flour
- 1/3 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold butter, cubed
- 3/4 cup brewed coffee, cooled
- 1/4 cup Irish cream liqueur
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, and salt. Mix in cubed cold butter until it resembles coarse crumbs.
- In a separate bowl, whisk together cooled brewed coffee, Irish cream liqueur, egg, and vanilla extract. Pour into the dry ingredients and stir until just combined. Fold in chocolate chips if desired.
- Turn out the dough onto a floured surface and gently knead a few times. Pat into a 1-inch thick circle and cut into wedges.
- Place on the prepared baking sheet and bake for 15-20 minutes until golden brown and a toothpick comes out clean. Allow to cool slightly before serving.
Notes
Serve warm drizzled with Irish cream or a glaze. Store in an airtight container for up to 3 days or freeze for up to a month.
