Delightful pastries combining rich coffee and smooth Irish cream flavors, perfect for breakfast or an afternoon treat.


Ingredients

  • 2 cups all-purpose flour
  • 1/3 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold butter, cubed
  • 3/4 cup brewed coffee, cooled
  • 1/4 cup Irish cream liqueur
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt. Mix in cubed cold butter until it resembles coarse crumbs.
  3. In a separate bowl, whisk together cooled brewed coffee, Irish cream liqueur, egg, and vanilla extract. Pour into the dry ingredients and stir until just combined. Fold in chocolate chips if desired.
  4. Turn out the dough onto a floured surface and gently knead a few times. Pat into a 1-inch thick circle and cut into wedges.
  5. Place on the prepared baking sheet and bake for 15-20 minutes until golden brown and a toothpick comes out clean. Allow to cool slightly before serving.

Notes

Serve warm drizzled with Irish cream or a glaze. Store in an airtight container for up to 3 days or freeze for up to a month.
