Description

A cozy, satisfying meal with tender beef and buttery garlic potatoes.

Ingredients

Scale
  • 2 pounds beef stew meat
  • 2 tablespoons garlic, minced
  • 1/2 cup butter
  • 1 pound baby potatoes, halved
  • 1 onion, chopped
  • 1 cup beef broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Pat the beef dry with paper towels and season with salt and pepper. Halve the baby potatoes. Chop the onion and mince the garlic.
  2. In a large cooker, melt the butter over medium heat. Add the minced garlic and chopped onion. Sauté until fragrant and the onion is translucent, about 3-4 minutes.
  3. Add the beef stew meat to the cooker. Cook, turning occasionally, until browned on all sides.
  4. Pour in the beef broth and season with salt and pepper to taste. Scrape any brown bits from the bottom of the cooker.
  5. Add the halved baby potatoes, pushing them into the broth.
  6. Secure the lid and cook on high pressure for about 30 minutes.
  7. Once done, carefully release the pressure according to your cooker’s instructions. Check the beef and potatoes for tenderness.
  8. Taste and adjust seasoning if needed. Sprinkle fresh parsley over the top before serving.
