- 2 pounds beef stew meat
- 2 tablespoons garlic, minced
- 1/2 cup butter
- 1 pound baby potatoes, halved
- 1 onion, chopped
- 1 cup beef broth
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Pat the beef dry with paper towels and season with salt and pepper. Halve the baby potatoes. Chop the onion and mince the garlic.
- In a large cooker, melt the butter over medium heat. Add the minced garlic and chopped onion. Sauté until fragrant and the onion is translucent, about 3-4 minutes.
- Add the beef stew meat to the cooker. Cook, turning occasionally, until browned on all sides.
- Pour in the beef broth and season with salt and pepper to taste. Scrape any brown bits from the bottom of the cooker.
- Add the halved baby potatoes, pushing them into the broth.
- Secure the lid and cook on high pressure for about 30 minutes.
- Once done, carefully release the pressure according to your cooker’s instructions. Check the beef and potatoes for tenderness.
- Taste and adjust seasoning if needed. Sprinkle fresh parsley over the top before serving.

This dish can be easily adapted with different herbs or cuts of beef.
