Description

These cookies are soft and tender, featuring a pleasant tang and extra moisture from cottage cheese, making them a delightful twist on the classic chocolate chip cookie.

Ingredients

Scale
  • 1 cup cottage cheese
  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare baking sheets.
  2. Cream together the cottage cheese, softened butter, brown sugar, and granulated sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla.
  3. In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the creamed mixture until just combined. Stir in the chocolate chips.
  4. Drop the dough by tablespoonfuls onto the prepared baking sheets, spacing cookies about 2 inches apart. Bake for 10 to 12 minutes, or until edges are golden and centers are set.
  5. Cool the cookies on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For best results, use full-fat cottage cheese and avoid overmixing the dough. To prevent spreading, chill the dough if it seems very wet.
