- 1 cup cottage cheese
- 4 large eggs
- 1/2 cup shredded cheese (cheddar or your choice)
- 1/2 cup diced bell peppers
- 1/4 cup chopped green onions
- Salt and pepper to taste
- Oil or cooking spray for greasing
Instructions
- Preheat your oven to 375°F (190°C). Prepare a muffin tin by greasing each cup with oil or a light spray.
- In a mixing bowl, whisk together the cottage cheese and eggs until smooth and well combined. Stir in the shredded cheese, diced bell peppers, and green onions. Season the mixture with salt and pepper to taste.
- Pour the egg mixture evenly into the greased muffin cups, filling them about 3/4 full. Bake for 20-25 minutes, or until set and lightly golden on top.
- Let the egg bites cool in the tin for a few minutes. Gently run a knife around the edges, then lift them out. Serve warm.
Notes
Serve with extra green onions or a sprinkle of smoked paprika. They pair well with fresh fruit or whole-grain toast.
