These egg bites are a creamy, savory protein-packed option perfect for breakfast or a snack.


Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup shredded cheese (e.g., cheddar or mozzarella)
  • 1/2 cup diced bell peppers
  • 1/2 cup chopped spinach
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • Cooking spray or oil for greasing

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a muffin tin with cooking spray or oil.
  2. In a medium bowl, combine the cottage cheese, eggs, shredded cheese, diced bell peppers, chopped spinach, salt, and pepper. Mix until well combined.
  3. Pour the mixture into the muffin tin, filling each cup about 3/4 full. Bake for 20-25 minutes, or until set and lightly golden.
