- 4 boneless, skinless chicken breasts
- 1 cup cottage cheese
- 1 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat the oven to 375°F (190°C). Pat the chicken breasts dry with paper towels and season lightly with salt and pepper. Place them in a baking dish in a single layer.
- Mix together the cottage cheese, grated Parmesan, garlic powder, paprika, salt, and pepper in a bowl. Stir until smooth and adjusted for seasoning.
- Cover each chicken breast with the cottage cheese mixture and sprinkle breadcrumbs on top. Drizzle with olive oil. Bake for 25-30 minutes or until cooked through and golden brown.
- Remove from the oven and let it rest for a few minutes before serving. Optionally, garnish with lemon or fresh herbs.
Notes
For extra crunch, swap plain breadcrumbs for panko. You can also make ahead by refrigerating the assembled dish for up to 24 hours before baking.
