Ingredients

  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, diced

Instructions

  1. Wash all vegetables. Dice the cucumber and bell pepper into small, even pieces. Halve the cherry tomatoes and finely dice the red onion. Pat the cucumber dry if it looks wet.
  2. In a large bowl, spoon in the cottage cheese. Add the diced cucumber, bell pepper, halved cherry tomatoes, and diced red onion.
  3. Drizzle the olive oil and lemon juice over the mixture. Add salt and pepper to taste. Gently toss everything so the cottage cheese coats the vegetables.
