Crispy tortilla melts filled with savory beef, melty cheese, and a rich, herby cowboy butter spread.
Ingredients

- 1 lb ground beef
- 4 tortillas
- 1/2 cup cowboy butter (butter mixed with herbs and spices)
- 1 cup cheese (cheddar or your choice), shredded
- 1/2 cup diced onions
- 1/2 cup diced tomatoes
- Salt and pepper to taste
Instructions
- Heat a large skillet over medium heat. Pat the ground beef dry with paper towels and season with salt and pepper.
- Add the ground beef to the hot skillet and cook over medium heat until browned and no longer pink, about 7–9 minutes. Drain excess fat if desired.
- In a medium bowl, combine the cowboy butter with diced onions and diced tomatoes. Stir until well mixed.
- Spread a layer of the cowboy butter mixture over half a tortilla, add a portion of cooked beef, and sprinkle with cheese. Fold the tortilla in half.
- Wipe the skillet clean and return to medium-low heat. Cook the folded tortilla for 2–3 minutes per side until golden brown and the cheese melts. Repeat with remaining tortillas. Serve warm.
Notes
Pairs well with salsa, guacamole, and lime wedges. You can store cooked melts in the refrigerator for 3-4 days or freeze for up to 2 months.
