- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup black beans, rinsed and drained
- 1 cup corn, drained
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup diced jalapeños
- 1/4 cup chopped cilantro
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper to taste
- Tortilla chips for serving
Instructions
- In a large bowl, combine the softened cream cheese and shredded cheddar cheese until well blended.
- Add black beans, corn, diced tomatoes, red onion, jalapeños, and cilantro to the cheese mixture. Fold gently until all ingredients are evenly distributed.
- Shape the mixture into a log and wrap tightly in plastic wrap. Refrigerate for at least 2 hours.
- Once chilled, remove from plastic wrap and place on a serving platter. Serve with tortilla chips for dipping.
Notes
For less heat, remove jalapeño seeds. You can freeze the log for up to 1 month.
