Description

A vibrant and creamy party dip that combines the flavors of cowboy caviar with a cheesy twist, perfect for game days and potlucks.


Ingredients

  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, drained
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup diced jalapeños
  • 1/4 cup chopped cilantro
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Tortilla chips for serving

Instructions

  1. In a large bowl, combine the softened cream cheese and shredded cheddar cheese until well blended.
  2. Add black beans, corn, diced tomatoes, red onion, jalapeños, and cilantro to the cheese mixture. Fold gently until all ingredients are evenly distributed.
  3. Shape the mixture into a log and wrap tightly in plastic wrap. Refrigerate for at least 2 hours.
  4. Once chilled, remove from plastic wrap and place on a serving platter. Serve with tortilla chips for dipping.

Notes

For less heat, remove jalapeño seeds. You can freeze the log for up to 1 month.
