Description

A vibrant, fresh, and zesty dish that combines the crunch of fresh vegetables with beans and corn, perfect for gatherings or as a side dish.


Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, diced
  • 1 jalapeño, seeded and minced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the black beans, corn, red bell pepper, green bell pepper, red onion, jalapeño, cherry tomatoes, avocado, and cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad mixture and toss gently to combine.
  4. Serve the Cowboy Caviar chilled or at room temperature alongside tortilla chips or as a vibrant side salad.

Notes

Let the Cowboy Caviar chill in the refrigerator for at least an hour for enhanced flavor. Add avocado right before serving to prevent browning.
