- 2 cups diced cooked ham
- 1 onion, diced
- 2 carrots, sliced
- 2 stalks celery, diced
- 4 potatoes, cubed
- 6 cups chicken or vegetable broth
- 1 cup green beans, chopped
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Peel and cube the potatoes. Dice the onion and celery. Slice the carrots and chop the green beans. Measure the ham and thyme for a smooth cooking process.
- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté until softened and fragrant, about 5 minutes.
- Stir in the diced cooked ham and cook for another 2 minutes, allowing the ham to warm and release flavor.
- Add the cubed potatoes, broth, green beans, dried thyme, and salt and pepper to taste. Bring to a boil, reduce heat, and let simmer for about 30 minutes, until the vegetables are tender.
- Taste the soup, adjust seasoning as needed, and let sit off heat for 5 minutes before serving.
- Ladle the soup into bowls, serve hot, and top with fresh parsley or cracked black pepper if desired.
Notes
Use low-sodium broth and lean ham to reduce sodium. Leftovers taste even better the next day.
