Ingredients

  • 2 cups diced cooked ham
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 stalks celery, diced
  • 4 potatoes, cubed
  • 6 cups chicken or vegetable broth
  • 1 cup green beans, chopped
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Peel and cube the potatoes. Dice the onion and celery. Slice the carrots and chop the green beans. Measure the ham and thyme for a smooth cooking process.
  2. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté until softened and fragrant, about 5 minutes.
  3. Stir in the diced cooked ham and cook for another 2 minutes, allowing the ham to warm and release flavor.
  4. Add the cubed potatoes, broth, green beans, dried thyme, and salt and pepper to taste. Bring to a boil, reduce heat, and let simmer for about 30 minutes, until the vegetables are tender.
  5. Taste the soup, adjust seasoning as needed, and let sit off heat for 5 minutes before serving.
  6. Ladle the soup into bowls, serve hot, and top with fresh parsley or cracked black pepper if desired.

Notes

Use low-sodium broth and lean ham to reduce sodium. Leftovers taste even better the next day.
