- 1 pound Italian sausage
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 4 medium potatoes, diced
- 2 carrots, sliced
- 1 can (15 ounces) diced tomatoes
- 2 cups kale or spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat 1 tablespoon olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon.
- Add the chopped onion and minced garlic. Cook until the onion is soft and fragrant, about 3–4 minutes.
- Stir in the diced potatoes, sliced carrots, and Italian seasoning. Pour in the chicken broth and canned tomatoes. Bring to a boil, then reduce heat and simmer uncovered for 20 minutes, until the potatoes are tender.
- Add the kale or spinach and cook an additional 5 minutes, until wilted. Taste and season with salt and pepper. Serve warm.
Notes
Serve in deep bowls topped with a drizzle of olive oil, grated Parmesan, or crushed red pepper for heat. A side of crusty bread or a salad pairs nicely.
