Ingredients

  • 1 pound Italian sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 4 medium potatoes, diced
  • 2 carrots, sliced
  • 1 can (15 ounces) diced tomatoes
  • 2 cups kale or spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat 1 tablespoon olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon.
  2. Add the chopped onion and minced garlic. Cook until the onion is soft and fragrant, about 3–4 minutes.
  3. Stir in the diced potatoes, sliced carrots, and Italian seasoning. Pour in the chicken broth and canned tomatoes. Bring to a boil, then reduce heat and simmer uncovered for 20 minutes, until the potatoes are tender.
  4. Add the kale or spinach and cook an additional 5 minutes, until wilted. Taste and season with salt and pepper. Serve warm.

Notes

Serve in deep bowls topped with a drizzle of olive oil, grated Parmesan, or crushed red pepper for heat. A side of crusty bread or a salad pairs nicely.
