- 1 cup Coca-Cola
- 1 cup vegetable oil
- 1 stick butter
- 1/2 cup buttermilk
- 2 cups sugar
- 2 cups all-purpose flour
- 1/2 cup cocoa powder
- 3 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup mini marshmallows
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a saucepan, combine Coca-Cola, vegetable oil, and butter over medium heat until the butter melts.
- In a large bowl, whisk together the sugar, flour, cocoa powder, baking soda, and salt.
- Gently whisk in buttermilk, eggs, and vanilla extract. Slowly add the warm Coca-Cola mixture until smooth.
- Fold in mini marshmallows until evenly distributed.
- Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
- Let the cake cool in the pan for 15 minutes before transferring to a wire rack.
