Description

A cozy, rustic dessert featuring tart cranberries and soft apple pieces, perfect for any occasion.

Ingredients

Scale
  • 1 cup cranberries, fresh or frozen
  • 2 apples, peeled and diced
  • 1/2 cup sugar
  • 1/2 cup butter, melted
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch cast-iron skillet.
  2. In a large bowl, mix melted butter and sugar until glossy. Beat in eggs and vanilla extract.
  3. In another bowl, whisk flour, baking powder, baking soda, salt, and cinnamon. Gradually add to the wet mixture, stirring until just combined.
  4. Fold in the cranberries and diced apples. Pour batter into the skillet and spread evenly.
  5. Bake for 30-35 minutes, until a toothpick comes out clean and the top is golden brown.
  6. Cool in the skillet for a few minutes, dust with powdered sugar if desired, and serve warm or at room temperature.

Notes

Serve warm with a scoop of vanilla ice cream or a light dusting of powdered sugar. For a festive touch, add whipped cream and a sprinkle of cinnamon.
