- 4 boneless, skinless chicken breasts
- 1 cup brie cheese, rind removed and chopped
- 1/2 cup cranberry sauce
- 1/4 cup fresh parsley, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste

Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine brie cheese, cranberry sauce, chopped parsley, garlic powder, salt, and pepper, and stir until well mixed.
- Carefully cut a pocket into each chicken breast and stuff each pocket with the brie and cranberry mixture.
- Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts on both sides until golden brown, about 4-5 minutes per side.
- Transfer the seared chicken to a baking dish and bake for 20-25 minutes or until the chicken is cooked through.
- Let the chicken rest for a few minutes before serving to retain moisture.
