Description

Delicious cranberry crumb bars that blend tart and sweet flavors, perfect for gatherings and snacks.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup oats
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 cups fresh or frozen cranberries
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a bowl, combine the flour, oats, brown sugar, baking powder, and salt. Mix well.
  3. Mix in the softened butter until crumbly.
  4. Press half of the mixture into the bottom of the prepared dish.
  5. In another bowl, mix the cranberries, granulated sugar, and vanilla extract until well-coated.
  6. Spread the cranberry mixture evenly over the crust.
  7. Crumble the remaining oat mixture on top of the cranberries.
  8. Bake for 30-35 minutes or until golden brown and bubbly.
  9. Allow to cool before cutting into squares.

Notes

For a denser texture, substitute half the all-purpose flour with whole wheat flour. You can add nuts or chocolate chips for variations.
