Ingredients

- 1 cup all-purpose flour
- 1/2 cup oats
- 1/2 cup brown sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 2 cups fresh or frozen cranberries
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
- In a bowl, combine the flour, oats, brown sugar, baking powder, and salt. Mix well.
- Mix in the softened butter until crumbly.
- Press half of the mixture into the bottom of the prepared dish.
- In another bowl, mix the cranberries, granulated sugar, and vanilla extract until well-coated.
- Spread the cranberry mixture evenly over the crust.
- Crumble the remaining oat mixture on top of the cranberries.
- Bake for 30-35 minutes or until golden brown and bubbly.
- Allow to cool before cutting into squares.
Notes
For a denser texture, substitute half the all-purpose flour with whole wheat flour. You can add nuts or chocolate chips for variations.
