Ingredients

- 2 cups fresh cranberries
- 1 cup sugar
- 1/2 cup water
- 1 teaspoon vanilla extract
- 1 package refrigerated pie crusts
- 1 egg (for egg wash)
- Flour (for dusting)
Instructions
- In a saucepan, combine cranberries, sugar, and water. Cook over medium heat until the cranberries burst and the mixture thickens into a syrup. Stir in the vanilla extract and let cool.
- Preheat the oven to 375°F (190°C).
- On a floured surface, roll out the pie crusts thinly. Cut into circles or squares.
- Place a spoonful of the cooled cranberry mixture in the center of each piece of crust. Fold over the dough and seal the edges with a fork.
- Brush the tops of each hand pie with an egg wash.
- Bake in the preheated oven for 25-30 minutes or until golden brown.
- Allow to cool for a few minutes before serving.
Notes
For extra flavor, add a pinch of cinnamon or nutmeg to the filling. Can substitute cranberries with blueberries or raspberries.
