Description

Delightful cranberry hand pies with a sweet-tart filling and flaky crust, perfect for the holiday season.

Ingredients

Scale
  • 2 cups fresh cranberries
  • 1 cup sugar
  • 1/2 cup water
  • 1 teaspoon vanilla extract
  • 1 package refrigerated pie crusts
  • 1 egg (for egg wash)
  • Flour (for dusting)

Instructions

  1. In a saucepan, combine cranberries, sugar, and water. Cook over medium heat until the cranberries burst and the mixture thickens into a syrup. Stir in the vanilla extract and let cool.
  2. Preheat the oven to 375°F (190°C).
  3. On a floured surface, roll out the pie crusts thinly. Cut into circles or squares.
  4. Place a spoonful of the cooled cranberry mixture in the center of each piece of crust. Fold over the dough and seal the edges with a fork.
  5. Brush the tops of each hand pie with an egg wash.
  6. Bake in the preheated oven for 25-30 minutes or until golden brown.
  7. Allow to cool for a few minutes before serving.

Notes

For extra flavor, add a pinch of cinnamon or nutmeg to the filling. Can substitute cranberries with blueberries or raspberries.
