Description
A vibrant dish that combines the sweet and tart flavors of cranberries with zesty oranges for a delightful chicken recipe perfect for any occasion.
Ingredients
Scale
- 4 chicken breasts
- 1 cup cranberry juice
- 1 cup fresh cranberries
- 1 orange (juice and zest)
- 2 tablespoons brown sugar
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh herbs (optional, for garnish)
Instructions
- In a saucepan, combine cranberry juice, fresh cranberries, orange juice, orange zest, brown sugar, and soy sauce. Bring to a simmer over medium heat, stirring occasionally. Cook until the cranberries burst and the sauce thickens slightly, about 5-7 minutes.
- While the glaze cooks, season the chicken breasts generously with salt and pepper.
- Heat olive oil in a large skillet over medium heat. Once hot, add the chicken breasts and cook for 6-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F).
- Pour the warm cranberry orange glaze over the chicken in the skillet and let it simmer for a few additional minutes, ensuring the chicken is well coated with the glaze.
Notes
For enhanced flavor, consider adding a pinch of cinnamon or red pepper flakes. Use bone-in chicken thighs for juicier results.
