Delightfully fluffy pancakes featuring fresh cranberries and zesty orange, enhanced with creamy ricotta for a perfect breakfast treat.


Ingredients

  • 1 cup ricotta cheese
  • 1/2 cup milk
  • 2 large eggs
  • Zest of 1 orange
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp sugar
  • 1 cup fresh cranberries
  • Butter or oil for cooking

Instructions

  1. In a large mixing bowl, combine the ricotta cheese, milk, eggs, and zest from one orange. Whisk until smooth and creamy.
  2. In a separate bowl, mix together the all-purpose flour, baking powder, salt, and sugar.
  3. Gradually add the dry ingredients to the wet mixture and stir gently until just combined. Fold in the fresh cranberries.
  4. Preheat a skillet over medium heat and add butter or oil. Pour 1/4 cup of batter for each pancake and cook until bubbles form. Flip and brown until golden.
