Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  2. In a mixing bowl, combine flour and powdered sugar. Cut in softened butter until it resembles coarse crumbs. Press this mixture into the bottom of the prepared dish.
  3. In another bowl, beat the cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well. Stir in lemon juice, vanilla extract, and baking powder. Pour over the crust.
  4. Bake for 25-30 minutes or until the center is set. Allow to cool before dusting with powdered sugar.
