- 1 head cauliflower, chopped
- 2 cups cooked chicken, shredded
- 1/2 cup buffalo sauce
- 1 cup cream cheese, softened
- 1/2 cup ranch dressing
- 1 cup shredded cheddar cheese
- 1/2 cup blue cheese, crumbled
- 1/4 cup green onions, sliced
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C) and grease a medium baking dish.
- Steam the chopped cauliflower until tender, about 5–7 minutes.
- In a large mixing bowl, combine the cooked shredded chicken, buffalo sauce, softened cream cheese, and ranch dressing. Season with salt and pepper and stir until smooth.
- Add the steamed cauliflower to the chicken mixture and fold gently until coated.
- Transfer the mixture to the baking dish and sprinkle the shredded cheddar and crumbled blue cheese on top.
- Bake for 25–30 minutes until heated through and cheese is bubbly and starting to brown.
- Garnish with sliced green onions before serving.
Notes
For extra crunch, sprinkle panko mixed with melted butter on top before baking. Adjust buffalo sauce to control heat.
