- 2 chicken breasts, diced
- 1 cup rice
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can cream of mushroom soup
- 1 cup chicken broth
- 2 tablespoons Cajun seasoning
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large skillet over medium heat, add a bit of oil and cook the diced chicken until browned, about 5 to 7 minutes.
- Add the onion, garlic, and bell pepper to the skillet, stirring until the vegetables soften, about 3 to 5 minutes.
- Stir in the rice, cream of mushroom soup, chicken broth, and Cajun seasoning. Bring to a boil, then reduce to a simmer. Cover and cook for about 20 minutes, or until the rice is tender.
- Stir in the heavy cream, seasoning with salt and pepper to taste, and cook for an additional 5 minutes. Garnish with chopped parsley before serving.
Notes
For a spicier dish, add more Cajun seasoning or jalapeños. For a lighter version, substitute heavy cream with low-fat milk. Leftovers can be stored in the refrigerator for 3 to 4 days.
