Description

A one-pot dish that marries bold Cajun flavors with comforting creaminess, perfect for weeknight dinners.


Ingredients

  • 2 chicken breasts, diced
  • 1 cup rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can cream of mushroom soup
  • 1 cup chicken broth
  • 2 tablespoons Cajun seasoning
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large skillet over medium heat, add a bit of oil and cook the diced chicken until browned, about 5 to 7 minutes.
  2. Add the onion, garlic, and bell pepper to the skillet, stirring until the vegetables soften, about 3 to 5 minutes.
  3. Stir in the rice, cream of mushroom soup, chicken broth, and Cajun seasoning. Bring to a boil, then reduce to a simmer. Cover and cook for about 20 minutes, or until the rice is tender.
  4. Stir in the heavy cream, seasoning with salt and pepper to taste, and cook for an additional 5 minutes. Garnish with chopped parsley before serving.

Notes

For a spicier dish, add more Cajun seasoning or jalapeños. For a lighter version, substitute heavy cream with low-fat milk. Leftovers can be stored in the refrigerator for 3 to 4 days.
