Description

Ingredients

  • 1 cup rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Sauté onions, garlic, and bell peppers until soft, about 3-5 minutes.
  2. Season the chicken breasts with Cajun seasoning, salt, and pepper. Add to the skillet and cook until browned on all sides, about 5-7 minutes.
  3. Stir in the rice, chicken broth, and heavy cream. Bring to a boil, then reduce heat to low and cover.
  4. Simmer for 20-25 minutes until rice is tender and chicken is cooked through. Garnish with chopped parsley before serving.
