Description

A cozy, spicy bowl of creamy potato soup enhanced with Cajun seasoning for a warm, smoky flavor.


Ingredients

  • 4 cups potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Green onions for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until soft and translucent, about 4–5 minutes.
  2. Add diced potatoes and pour in chicken broth to cover. Bring to a boil, then reduce to a simmer.
  3. Simmer until potatoes are tender and can be easily broken apart with a fork, about 15–20 minutes. Stir in Cajun seasoning and adjust salt and pepper to taste. Use an immersion blender to puree the soup to desired consistency.
  4. Return pot to low heat, stir in heavy cream, and heat through gently without boiling. Serve hot, garnished with sliced green onions.

Notes

For a heartier meal, serve alongside grilled sausage or top the soup with crumbled bacon or shredded cheddar.
