- 4 cups potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Green onions for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until soft and translucent, about 4–5 minutes.
- Add diced potatoes and pour in chicken broth to cover. Bring to a boil, then reduce to a simmer.
- Simmer until potatoes are tender and can be easily broken apart with a fork, about 15–20 minutes. Stir in Cajun seasoning and adjust salt and pepper to taste. Use an immersion blender to puree the soup to desired consistency.
- Return pot to low heat, stir in heavy cream, and heat through gently without boiling. Serve hot, garnished with sliced green onions.
Notes
For a heartier meal, serve alongside grilled sausage or top the soup with crumbled bacon or shredded cheddar.
