- 4 large potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 4 cups vegetable broth
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons butter
- Green onions for garnish
Instructions
- In a large pot, melt butter over medium heat. Add the chopped onion and minced garlic and sauté until softened and fragrant, about 3-5 minutes.
- Add the diced potatoes to the pot, followed by the Cajun seasoning. Stir well to ensure the potatoes are evenly coated.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat and let it simmer until the potatoes are tender, roughly 15-20 minutes.
- Using a potato masher, partially mash the potatoes to create a creamy texture while still leaving some chunks. Stir in the heavy cream and season with salt and pepper to taste. Serve hot, garnished with green onions.
Notes
For a spicier kick, increase the Cajun seasoning. Use an immersion blender for a smoother soup or substitute heavy cream with coconut milk for a lighter version.
