Description

A delightful and nourishing soup that combines comforting potatoes with bold Cajun seasoning, perfect for chilly nights.

Ingredients

Scale
  • 4 large potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 4 cups vegetable broth
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons butter
  • Green onions for garnish

Instructions

  1. In a large pot, melt butter over medium heat. Add the chopped onion and minced garlic and sauté until softened and fragrant, about 3-5 minutes.
  2. Add the diced potatoes to the pot, followed by the Cajun seasoning. Stir well to ensure the potatoes are evenly coated.
  3. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat and let it simmer until the potatoes are tender, roughly 15-20 minutes.
  4. Using a potato masher, partially mash the potatoes to create a creamy texture while still leaving some chunks. Stir in the heavy cream and season with salt and pepper to taste. Serve hot, garnished with green onions.

Notes

For a spicier kick, increase the Cajun seasoning. Use an immersion blender for a smoother soup or substitute heavy cream with coconut milk for a lighter version.
