- 8 ounces of pasta (such as penne or fettuccine)
- 1 pound of Cajun sausage (like andouille or kielbasa), sliced
- 1 medium onion, diced
- 1 bell pepper, diced
- 3 cloves of garlic, minced
- 1 cup of heavy cream
- 1 cup of chicken broth
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- Olive oil
- Fresh parsley for garnish
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add the sliced Cajun sausage and cook until browned.
- Add the diced onion and bell pepper to the skillet, sautéing until softened.
- Stir in the minced garlic and cook for an additional minute. Pour in the chicken broth and bring to a simmer. Add the heavy cream and Cajun seasoning, stirring well to combine. Allow to simmer for 5-7 minutes until slightly thickened.
- Add the cooked pasta to the skillet, tossing to coat in the sauce. Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on the stovetop or microwave, adding more broth or cream if necessary.
