- 2 large potatoes, peeled and sliced
- 1 cup cheese, shredded (cheddar or your choice)
- 1 cup heavy cream
- 2 eggs
- 1 onion, chopped
- Salt and pepper to taste
- 1 pie crust
Instructions
- Preheat your oven to 375°F (190°C). Peel and slice the potatoes about 1/8 to 1/4 inch thick. Boil the potatoes until tender, about 8–12 minutes, then drain.
- In a skillet, sauté the chopped onion until translucent, about 5–7 minutes. In a bowl, whisk together the heavy cream, eggs, a pinch of salt, and pepper until smooth.
- Layer half of the boiled potatoes in the crust, followed by half of the sautéed onions and half of the shredded cheese. Repeat the layers, then pour the cream mixture over the top. Bake for 30–35 minutes until golden brown and set.
- Allow the pie to cool for 10–15 minutes before serving.
Notes
For a crisper bottom crust, blind-bake the crust for 8–10 minutes before layering. Customize the cheese type and add herbs for extra flavor.
