Creamy Chicken & Gnocchi

Description

A rich and comforting creamy chicken and gnocchi dish, perfect for busy weeknights.


Ingredients

  • 1 pound chicken breast, diced
  • 1 tablespoon olive oil
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup spinach, chopped
  • 1 package gnocchi
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Pat the diced chicken dry and season lightly with salt and pepper. Preheat a large skillet over medium heat and add the olive oil.
  2. Add the diced chicken to the hot skillet. Cook until browned and cooked through, about 5–7 minutes.
  3. Stir in garlic powder and onion powder and cook for about 1 minute until fragrant. Pour in chicken broth and bring to a gentle simmer.
  4. Add heavy cream and chopped spinach, stirring until the spinach wilts and the sauce thickens slightly.
  5. Cook the gnocchi according to package instructions, drain, then add to the skillet tossing gently to coat. Simmer for a couple of minutes, taste and adjust seasoning.
  6. Serve hot with freshly grated Parmesan on top.

Notes

For best texture after storing, reheat slowly and add a little liquid (chicken broth or cream) to bring back silkiness.
