- 1 lb chicken sausage, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 potatoes, diced
- 3 cups chicken broth
- 1 cup heavy cream
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent and fragrant.
- Add the sliced chicken sausage to the pot. Cook, stirring occasionally, until the sausage is nicely browned.
- Stir in the diced carrots and potatoes, cooking for a few minutes. Then, pour in the chicken broth. Bring to a boil before reducing the heat. Let it simmer for about 20 minutes, or until the vegetables are tender.
- Stir in the heavy cream, mix well with the broth. Season with salt and pepper to taste, and let it simmer for an additional 5 minutes. Serve hot, garnished with chopped fresh parsley.
