Ingredients

  • 1 lb chicken sausage, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent and fragrant.
  2. Add the sliced chicken sausage to the pot. Cook, stirring occasionally, until the sausage is nicely browned.
  3. Stir in the diced carrots and potatoes, cooking for a few minutes. Then, pour in the chicken broth. Bring to a boil before reducing the heat. Let it simmer for about 20 minutes, or until the vegetables are tender.
  4. Stir in the heavy cream, mix well with the broth. Season with salt and pepper to taste, and let it simmer for an additional 5 minutes. Serve hot, garnished with chopped fresh parsley.
