- 8 oz pasta
- 1 lb ground beef
- 1 can chipotle peppers in adobo sauce
- 1 cup heavy cream
- 1 cup beef broth
- 1 cup shredded cheese
- 1 onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat 1 tablespoon olive oil in a large pot over medium heat. Add the diced onion and minced garlic. Sauté until the onion becomes translucent and fragrant, about 3–4 minutes.
- Add the ground beef to the pot. Break it up with a spoon and cook until browned and no longer pink, about 6–8 minutes. Stir in the chipotle peppers and cook for another minute.
- Pour in the pasta, beef broth, and heavy cream. Stir to combine and bring to a gentle boil. Reduce heat to a simmer, cover, and cook until the pasta is tender, about 10–12 minutes, stirring occasionally.
- Remove from heat and stir in the shredded cheese until melted and creamy. Taste and season with salt and pepper. Serve hot, garnished with cilantro or green onions if desired.
Notes
For less heat, use fewer chipotle peppers or remove the seeds. Can substitute half-and-half for a lighter option.
