Description
A simple yet delicious side dish combining fluffy jasmine rice with rich coconut milk for a taste of the tropics.
Ingredients

- 1 cup jasmine rice
- 1 cup coconut milk
- 1 cup water
- 2 tbsp sugar
- 1/2 tsp salt
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a medium saucepan, combine the rinsed rice, coconut milk, water, sugar, and salt. Stir gently.
- Bring the mixture to a boil over medium heat. Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender.
- Remove from heat and let sit covered for 5 minutes. Fluff with a fork and serve warm, optionally garnished with fresh cilantro or lime.
Notes
For a richer flavor, use full-fat coconut milk. Adjust sweetness to taste. Store leftovers in an airtight container for 3-4 days.
