A quick and delicious weeknight dinner featuring chicken breasts in a creamy garlic sauce with mushrooms and spinach.

- 4 chicken breasts
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 tablespoon olive oil
- Salt and pepper to taste
- Parmesan cheese (optional) for garnish
Instructions
- Pat the chicken breasts dry and season both sides generously with salt and pepper. Mince the garlic, slice the mushrooms, and rinse the spinach.
- Heat a large skillet over medium heat and add the olive oil. Let the oil warm until shimmering.
- Add the seasoned chicken breasts to the skillet. Cook until golden brown and cooked through, about 6–7 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and sliced mushrooms. Sauté until soft and browned, about 3–4 minutes. Add spinach and stir until wilted. Pour in heavy cream and simmer for 2–3 minutes to thicken. Return chicken to skillet and coat with sauce, cooking for an additional 2–3 minutes.
Notes
Serve over buttered noodles, mashed potatoes, or rice. Store in an airtight container for up to 3-4 days in the fridge or freeze for up to 2 months.
